In the spirit of Valentine’s Day, I’ve whipped up a little something to spread the love–sort of literally. Heart-shaped boxes stuffed with chocolate usually dominate the candy aisle this time of year, but what about a treat that’s actually good for you and contains heart-healthy ingredients? That’s true love.
In addition to fiber, vitamins, and antioxidants, chia seeds are chock-full of healthy Omega-3 fatty acids. Not to mention, they mix well with jams, spreads, drinks, and sauces so there’s a rich selection of recipes that highlight the humble superfood.
This strawberry chia seed spread is perfectly delicious with fresh or frozen fruit and adds a touch of sweetness to any dish from multi-grain toast for breakfast, to a bowl of vanilla yogurt (or ice cream!) for dessert. Plus, it adds the prettiest pop of pink to any Valentine’s day spread! Enjoy.
Strawberry Chia Seed Spread
-2 cups strawberries (fresh or frozen)
-2 tbsp chia seeds
-2 tbsp honey (adjust to your preferred sweetness level)
-1 tbsp coconut oil
-1/2 tsp vanilla extract
– pinch cinnamon
Makes about 2 cups
1. Combine strawberries, chia seeds, and coconut oil into food processor or blender and blend until mixture is almost smooth.
2. Cook mixture in pot over low to medium heat for about 5-7 minutes or until it begins to bubble. Add vanilla extract and cinnamon during cooking time and stir.
3. Let mixture cool completely and store in air-tight jar in the fridge for about a week.
4. Enjoy with toast, yogurt, ice cream, crackers, in smoothies, straight out of the jar with a spoon, or on top of whatever else your heart desires.
